The temperatures the last few days have been downright frigid, which seemed like a good enough reason to attempt a cake meant to evoke the taste of hot cocoa. The cake layers are standard chocolate cake. It’s the filling and frosting that give this cake it’s name.
The frosting is whipped cream, enhanced and stabilized by some melted white chocolate and cocoa powder.
The filling is marshmallow and compliments the chocolate cake nicely. However, working with the marshmallow creme is a messy pain. It does not come out of the jar easily and it takes a lot of effort to get it to combine with the other ingredients. But in the end it was worth it.
The marshmallows on top are nice for decoration, but they get in the way of cutting this cake and they also get stale very quickly. I tossed many of them.
While the filling was truly a nightmare to make and spread on this cake, the combined flavor of all the components was excellent. It may actually be worth the struggle to make this cake again.
