This is the cake that started it all. In June of 2018, America’s Test Kitchen released for free a recipe from their upcoming cookbook “The Perfect Cake”. The recipe was for a 6 layer rainbow cake. At the time, I didn’t have the baking chops to attempt the full recipe so I cut down the portions and used much smaller cake pans than the 9" they recommended. That cake came out okay, but it didn’t blow anybody away.

Three years later, I was ready to attempt the full recipe. With a little prep work measuring ingredients the night before, this cake went together surprisingly fast. The cake layers are just colored white cake. But they have really good flavor and stayed really moist. The frosting is vanilla flavored, but whipped in the mixer for about 5 minutes to make it light and fluffy. I’m very pleased with how this came out and also how good the final product tasted.

Also, this cake weight nearly 10lbs.
