I had left over graham crackers from the chocolate eclair cake, so on Jake and Briana’s suggestion I made this ice cream cake. It was fun to make the fudge layer for the bottom, but overall, this cake feels like cheating. The ice cream is store bought, so this recipe basically amounts to assembly. It was still tasty enough. However, the marshmallow layer on top does not store well. This is a cake made to be served and eaten in one setting, right out of the oven.

And on that note… if your oven has multiple broiler settings, use Low. And don’t take your eyes off of the marshmallows… Trust me, you don’t want flames.
