I had high hopes for this cake based on the picture. I love strawberries and what looked like a shortbread. But once completed, I was underwhelmed with the flavor and texture of this cake. The cake was a bit more dense than I thought it would be and the powdered sugar on top soaked into the top cake layer way too fast. But cake is cake so I continued to eat it. And by the third or fourth day, the juice from the berries has started to soften the cake and it actually ended up having a really good flavor. To be fair, the recipe explicitly recommends waiting a couple days to consume this cake. But I didn’t listen. Lesson learned. It is still not one of my favorite cakes, but it is pretty good after a while.
