I recently acquired some ramekins. Their immediate purpose was to try a creme brulee from another cookbook, but I knew there were a few recipes in this cookbook where I could use them. The batter for this lemon pudding comes together really quickly. The lemon zest is steeped in the milk to really embed the lemony flavor. I was skeptical that one batter would turn out a pudding-like dessert at the bottom of the ramekin, and a cake-like one on top....

Two of my friends have birthdays this weekend, so I thought a festive confetti cake would be fun to make. This is a pretty straightforward white cake with some sprinkles mixed in. I was pleased to see that the sprinkles didn’t sink to the bottom of the cake layers. The frosting is vanilla. Happy Birthday Dustin and Susie!

Peanut Butter Pretzel Cake

The name of this cake pretty much describes it. The cake incorporates some flour made of ground up pretzels as well as a little molasses. Overall, the crumb is a little dry, but it does taste a lot like a pretzel. The frosting is made with peanut butter and is incredibly tasty. It also pairs nicely with the flavor of the cake. But for me, the best part is the candied peanuts on top....

A coffee crunch cake

Blum's Coffee Crunch Cake

Apparently this cake was popularized by the in-house bakery of the I. Magnin department store in the 70s in San Francisco. The cake has a wonderful lemony flavor that pairs nicely with the lightly-coffee-flavored whipped cream between the layers and surrounding the cake. The “crunch” comes from crushed coffee-flavored “seafoam” candy pieces covering the outside. Interestingly, I’ve been trying to perfect a version of seafoam candy (without coffee flavoring). So it was fun to see it in this cookbook and to try it on a “real” recipe....

Magic Chocolate Flan Cake

This cake is wonderful! The texture of the custard is smooth. The chocolate cake is moist. And the caramel topping brings it all together. I’m not sure exactly where it ranks, but it’s definitely in the top 10 of the cakes I’ve made. It was fun to bake, too. The chocolate cake batter starts off in the middle, but by the time it’s done baking, it’s on the top! And since there aren’t that many ingredients that go into it, I foresee this recipe being used again!...

This cake is unimpressive. The only thing it really has going for it is how easy it was to make. The ingredients for the cake batter can be mixed by hand. The cake, though, doesn’t have a very strong maple flavor and the texture is a bit more dry than a cake made with butter. I don’t think I’ll be making this one again.

Smore's Ice Cream Cake

I had left over graham crackers from the chocolate eclair cake, so on Jake and Briana’s suggestion I made this ice cream cake. It was fun to make the fudge layer for the bottom, but overall, this cake feels like cheating. The ice cream is store bought, so this recipe basically amounts to assembly. It was still tasty enough. However, the marshmallow layer on top does not store well. This is a cake made to be served and eaten in one setting, right out of the oven....

I am heading to Orlando in a few days and have a ton left to do to get ready for the trip. So I needed an easy cake that I could finish early.
