I’ve been wanting to make cake pops since I saw them on the Netflix baking show Nailed It a few years ago. However, it took me a while to find the lollipop sticks. Fortunately, I randomly discovered a baking shop in Kansas after getting lost one day and they had a pack for a reasonable price.

So, sticks acquired, I committed to using the extra time on this holiday weekend to make these. And it’s a good thing I choose a long weekend… they are tedious.

I really like the chocolate cake recipe that forms the core of these pops. It’s one I’d definitely consider making again and leaving in its 8x8 cake form. It was very moist and flavorful and probably easier to make than the Chocolate Snack Cake.

The tedium of this recipe comes from the dipping of the pops into melted white chocolate. As I learned, the trick is to not heat your chocolate TOO much. Otherwise, it takes too long for the coating to start to harden around the frozen cake core. After struggling with the first 18, the second were a breeze because the chocolate was at a better temperature.

These treats are very good, even if they are a bit of a pain to make.
